Licorice (Glycyrrhiza glabra) is a perennial plant with a long history of use by herbalists. The root is long, slender, and pliant. It produces a colorless glucoside, glycyrrhizin, which turns black in the process of extraction and is used as a flavoring for confections and in medicine, as an emollient and demulcent.
