Look for skirt steak that has a clear, red color and is firm to the touch. Make sure to buy it on or before the “sell by” date on the package (the last day it should be offered for sale).
Refrigerate skirt steak in its original packaging for up four days or freeze for up to two weeks.
For tender skirt steak, marinate in the refrigerator for six hours or overnight.
Marinate the steak and then place it directly over the heat source. Grill for 4 minutes, then turn and grill for another 4 minutes for rare, longer for medium.
