Pumpernickel
Preparation, uses, and tips
Spread regular or appetizer-sized slices of pumpernickel with low-fat cream cheese, layer with smoked salmon and thinly sliced tomato, and top with capers.
Buying and storing tips
Buy pumpernickel in the bread or bakery section of most natural food stores and supermarkets. Store in a plastic bag at room temperature, and use within a few days.
